What is Aiosa Coupage
Our Aiosa Coupage olive oil is a type of extra virgin olive oil (EVOO) that is made by blending different varieties of olives: Royal de Alloza, Arbequina, Empeltre & Verdeña.
The olives are harvested and processed separately before being blended together in precise proportions to create a unique and complex flavor profile. Aiosa Coupage EVOO is often used to balance out the flavors and aromas of different olive varieties, resulting in a well-rounded and harmonious oil. The term “coupage” comes from the French word for “blend,” and is commonly used in the world of wine and spirits as well as in the production of high-quality EVOO. Aiosa Coupage olive oil is a popular choice for those who appreciate the unique flavors and aromas of different olive varieties, and is often prized for its versatility in cooking and as a finishing oil.
In each harvest, our oil presents its own organoleptic qualities, the result of the weather characteristics and the annual process of each of the olive varieties that we grow, always harvested manually.
The result is limited editions of our coupage, an oil made by cold extraction and early harvesting, obtained only through mechanical processes, which always provide an intense flavor and a natural, healthy and high-quality product.

How we coupage it
The process of coupage involves blending different varieties of extra virgin olive oil (EVOO) together to create a unique and complex flavor profile. The olives are harvested and processed in cold conditions before being mixed. The exact mixing process can vary every year depending on the annual climate, the amount of olives that the trees bear or other variables, but it always involves tasting and testing the individual oils to determine the ideal blend. Then, the oil will be bottled and labeled as coupage EVOO. The goal of coupage is to create an oil that is well-balanced and harmonious, with a complex flavor that showcases the best qualities of each olive variety. Aiosa Coupage olive oil is often used in cooking as a finishing oil, and is a popular choice for those who appreciate the unique flavors and aromas of different olive varieties.
When do we coupage it
The process for our extra virgin olive oil (EVOO) typically takes place at the beginning of olive ripening, when the olives start to change colour. The blending or coupage of the oils can happen at various stages of the production process, depending on the progress of the season. Some producers may wait until the oils have aged and matured before blending them together, instead we choose to blend the oils every day like a work of art that is built day after day. The timing of the coupage process can have an impact on the resulting flavor profile of the coupage EVOO. Regardless of when the blending occurs, the goal of the coupage process is to create an oil with a unique and harmonious flavor profile that highlights the best qualities of each individual oil.
Our olive varieties
There are over 2,000 different varieties of olives in the world. Aiosa Coupage EVOO is made primarily with the following varieties, all of them growed in Alloza:
- Royal de Alloza: This variety of olive, native to our village, is the main star of our EVOO and recently, it has been included in the Slow Food Ark of Taste. It takes its name from the color of the olive has in the first phase of maturation.
- Empeltre: It is an autochthonous variety found throughout the middle valley of the Ebro River and it has a double use, for olive oil production and table olives.
- Arbequina: It’s a pretty interesting olive for our blend. It’s characterized by being a very small olive but with consistent and high production over the years.
- Verdeña: It is an original variety from the pre-Pyrenees region that it’s characterized by being a large olive with a very late maturity.
By blending these four olive varieties in different proportions, we obtain our highly appreciated Aiosa Coupage EVOO every year.
